  Crab Stuffed Baked Potatoes  
 

1 pkg rock crab meat (6 oz/170 g)
6 potatoes, baked
1 tbsp butter (15 mL)
3/4 cup sour cream (175 mL)
1/4 cup grated onion (50 mL)
1/4 tsp pepper (1 mL)
1/4 cup diced mushrooms (50 mL)
1/2 cup grated cheddar cheese (125 mL)

Preheat oven to 375F (190C). Cut baked potatoes in half lengthwise and carefully scoop out the insides reserving the skins. In a bowl combine potato, butter, sour cream, onion and pepper. Beat until smooth. Fold in crab meat and diced mushrooms and then put mixture back equally into the 12 potato halves. Sprinkle with grated cheese and place on a baking sheet. Bake for 10 to 15 minutes until hot. Serve at once.

Serves six.
