  Scallops with Tarragon and Chives  
 

1     Tbsp butter
3/4    lb scallops, rinsed, patted dry and quartered
1      minced garlic clove
3     Tbsp. shallots minced
3/4     tsp. Tarragon, crumbled
1     tsp. Fresh lemon juice

Melt half the butter in a heavy nonstick skillet over medium high heat.  Saute scallops about 1 minute and transfer to a dish.  Melt remaining butter in same skillet over medium heat.  Saute garlic and shallot for 2 minutes, stirring until softened.  Stir in remaining ingredients and scallops.  Season with salt and pepper to taste.  Cook 1 - 2 minutes, stirring, till heated through. Serve immediately.
