  Christmas Eve Seafood Chowder  
 

6 cups (1.51) Water
4 Large Potato, diced
1 Large Onion, diced
1 tsp (5mL) Salt
1 lb (400 g) Raw Fish (Haddock, Sole, Pollack, Salmon or chowder mix pack)
1 can (300 mL) Broken Lobster
110 oz can (280 ml) Clams
12 oz (375 g) Scallops
2 cups (500 mL) Baxter Cereal Cream
1 cup (250 mL) Baxter Whole Milk
4 tbsp (50 mL) Baxter Butter or Margarine
1/2 tsp (2 mL) Pepper
2 tbsp (25 mL) Parsley, fresh chopped (1 T dried)
1/4 cup (50 mL) Green Onion, Chopped

1. Dice potato. Simmer in water in large saucepan until tender. Add diced onion, fish and salt.

2. Simmer until fish is tender. Add canned seafood and scallops. Simmer for 5 minutes. Add cream, milk and margarine. Heat until very hot but not boiling. Simmer on low heat for 20 to 30 minutes to allow flavors to blend. Adjust seasoning. Add parsley and green onion.

3. Serve with hot biscuits or cornmeal muffins and green salad for a complete meal.
